A Sweet Treat for Your Sweetie

This Valentine’s Day stay in and make your loved one a home cooked with love dinner. And for dessert, try this sweet mash-up for something a bit different. Playful, simple and delicious, combine chocolate chip cookies with cannoli cream to make a delectable little sandwich. And there’s nothing better on the side than a hot mug of hot chocolate sprinkled with a bit of cinnamon – because you know what they say about cinnamon… 😉

Cannoli Cream

1 1/2 cups whole milk ricotta cheese
1/2-3/4 cup powdered sugar
1/2 tbs Grand Marnier

Overnight, drain the ricotta cheese in a cheesecloth lined strainer over a bowl to remove excess water. Mix the sugar and Grand Marnier in and let chill.

Bake your favorite chocolate chip cookie recipe and let cool. Place some of the cannoli cream in between two cookies to form a sandwich.

Because Sometimes You Just Want A Plate of Vegetables

It’s not often that I don’t crave pasta or rice or meat! But I’ve really just wanted a plate of vegetables lately. This weekend is for me – organizing, cleaning, resting, rejuvenating. And of course hibernating from the cold and snow! And what perfect way to start this weekend than with that big plate of sautéed vegetables. It’s easy, quick and healthy. And you can use any mix of vegetables that you like. I used peppers, asparagus, cauliflower, zucchini, and grape tomatoes. Sautéed these up in a pan with olive oil, salt, pepper, garlic powder, and red pepper flakes – all to taste. Start with your harder vegetables as these will take more time to cook. Add the softer ones after 5-7 minutes. At this time also add the juice from half a lemon. Sauté another 5-7 minutes until cooked through as desired. Enjoy!
