But for those that love nachos but want to eliminate the chips, here’s a delicious variation with stuffing mushrooms! Stuff the mushrooms with a half a teaspoon to a teaspoon of cream cheese, a half a teaspoon to a teaspoon of salsa, sliced olives, sliced scallions and top with a bit of shredded cheese. Bake in the oven for 20 minutes. And there ya go!
